Spelt Waffles

Breakfast Recipes:

▪ 2 cups whole spelt flour
▪ 2 teaspoons baking powder
▪ 1/2 teaspoon salt
▪ 1 tablespoon cinnamon
▪ 3 eggs
▪ 1/2 cup Olive oil
▪ 1 1/2 cup almond milk
▪ 1 tablespoon vanilla

In a medium size mixing bowl, combine spelt, baking powder, salt and cinnamon. In smaller bowl, beat eggs, add the olive oil, almond milk and vanilla.
Add The wet ingredients into dry ingredients. Stir gently till ingredients are blended together. Do not use mixer and do not over mix.
Pour The batter onto a preheated waffle iron and bake according to manufacturer’s directions or until golden brown.

These freeze really well and work well with being heated back up in the toaster. You can add all kinds of topings here.. Like pictured above, Greek Yogurt and Blueberries. I have added almond butter and half of a banana, or you can go old school and just use maple syrup.
