Pumpin Butter - Very Easy
1 can pumpkin purée or homemade solid pack
2 tbsp packed light brown sugar
1/2 cup apple cider
1 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon freshly grated whole nutmeg
1/4 teaspoon ground cloves
1 teaspoons freshly squeezed lemon juice
combine all ingredients except lemon juice in a sauce pan. On medium-high heat and bring mixture to a boil. Once the mixture reaches a full boil, reduce heat to medium-low.
Continue to simmer the mixture, stirring frequently to prevent burning or scorching, until thickened, about 35 to 45 minutes.
poor the mixture to bowl and stir in lemon juice. allow it to Cool completely.
Put it into 2 jelly jars.. and store in the fridge.
now you can double this recipe or triple it...
If you would like to make Jack Daniels Pumpkin Butter: Add 1 tablespoon of jack Daniels before cooking the pumpkin butter.
